Healthy lunches

Something completely different for a change… a blogpost about food! As most of my readers know, we are a young family. Two fulltime working adults, a lovely girl of 4.5 years old (she’s going to be 5 this summer – eek – time flies!), two cats, a dog and a bunch of fish. Needless to say, we are busy. Especially because we have a lot of hobbies: traveling, gardening, we run two blogs, we want to excercise a bit and have a ton of cleaning to do around the house with our semi-zoo. Oh, and did I mention we read a lot and watch several TV-series? šŸ˜‰

Each evening one of the dreaded task is to make the lunchboxes. We usually do this after dinner and it’s mostly the last thing we do before we can go and do some kind of hobby. Very often we don’t look forward to this task. It’s the last thing. Could be that. Our stomach is full and we can’t think of food – could also be that. But mostly I think it is because our lunch is uninspiring: bread, some cold meats or cheese in between. It’s a quick make. And we often hate it…

So, last week I decided to try to make some alternative lunches for a change. I’m starting with making one on Sunday afternoon for Monday and one on Wednesday afternoon (we are home then) for Thursday, since they do take more time than just putting some meat in between two slices of bread.

I can tell you though, the taste of this salad today was so good, that it is motivating to stick with those alternative lunches šŸ™‚

For those who would like to try it out themselves: here is the recipe.

For two persons:
100 gr of lettuce
100 gr of smoked salmon
100 gr of goats cheese
half a cucumber
100 gr of cherry tomatoes
50 gr of roasted pine nuts
the juice of one lemon
two table spoons of white wine vinegar
one table spoon of olive oil
salt – pepper – some fresh chives

Chop op the goats cheese, the cucumber, the salmon and the cherry tomates. Mix them in a bowl, together with the lettuce of your liking. Mix in the roasted pine nuts.
Whisk together the lemon juice, the vinegar, the olive oil and add salt, pepper and freshly chopped chives to your liking. Pour over the salad and mix well. Eat immediately with some bread or baked potatoes as side dish.

I put the salad on top of all the other ingredients, so it stayed fresh. Didn’t mix up anything untill the last minute at work, and poured over the dressing as well last minute. Worked pretty well šŸ™‚
